Abstract
Chico Paio is a traditional dish from the cuisine of Barroso. This dish was created as a reinterpretation of Dobradinha, but with changes in the types of meat used. Chico Paio is registered with the Instituto Estadual do Patrimônio Histórico e Artístico de Minas Gerais, with documentation of its ingredients and preparation method. However, although Chico Paio is recognized locally and by state cultural institutions, there is a gap in the literature that brings together the culinary, historical, and cultural aspects of its preparation. Within this context, the specific objectives of this study were to: conduct a survey of restaurants that serve Chico Paio in the municipality of Barroso, MG; analyze whether there are differences in the versions offered by the establishments, considering the Instituto Estadual do Patrimônio Histórico e Artístico de Minas Gerais inventory and the main ingredients that make up the dish; and highlight the importance of standardizing technical data sheets to preserve food heritage and cultural assets. To this end, interviews were conducted in five establishments that produce and sell Chico Paio, and based on their responses, it was verified which establishments complied with the inventory and which did not. It was observed that some vendors were aware of the inventory, but did not follow its recommendations, such as using the same ingredients and preparation methods.
