Abstract
Viticulture in Brazil has been gaining increasing importance, with the development of research, technologies, and techniques for planting and managing vineyards. These advancements, combined with the unique conditions of a country with a continental extension, different cultivable regions with distinct climates, and varying harvest seasons, attract the attention of curious consumers and global experts. Among the wide variety of wines produced in Brazil, the subject of this study is the “Winter Wine,” produced through a vine management process called double-pruning, which allows grape harvesting during winter and results in wines with quality and typicity that express the "tropical high-altitude terroir." This study aimed to analyze the trade of Winter Wines in the restaurants of the historic center of Ouro Preto, MG, and to identify the demands, challenges, and potential of this product's market in the city, a World Heritage Site and showcase for tourists from around the world. To this end, a qualitative-quantitative approach was adopted, applying questionnaires to those responsible for the wine cellars in the restaurants. This research is justified by the understanding that the trade of Winter Wines in Ouro Preto represents an opportunity for visibility for producers seeking to expand their commercial horizons. For the local market, the inclusion of these wines in wine lists can elevate the customer experience, offering a product with unique characteristics and pairing possibilities with the traditional Minas Gerais cuisine offered.
