Abstract
Santo Antônio do Salto is one of the twelve districts of the city of Ouro Preto/MG and the local cuisine is full of dishes made by local grocery stores with ingredients from Minas Gerais and many of them collected in their own backyards. In this sense, Minas Gerais cuisine is a cuisine of stories, tradition, culture, flavor, affection and Minas Gerais. This course completion work has the general objective of identifying and describing the culinary knowledge and practices of the district of Santo Antônio do Salto. To achieve this objective, three specific objectives were achieved: identifying the traditions and culinary recipes of the district of Santo Antônio do Salto; list knowledge and practices related to local cuisine; and reveal the local food heritage. The methodology adopted consists of an exploratory-descriptive approach, with a qualitative bias, using techniques such as bibliographic review, data collection from documentary sources, analysis of the recipes that make up the booklet “Santo Antônio do Salto-culture and typical cuisine”, content analysis digital marketing and semi-structured interviews. The choice of this theme is justified by the fact that Gastronomy is interdisciplinary, involving historical, geographical and anthropological aspects, which allows evaluating regional culinary identity, discussing culinary knowledge and its forms of transmission and contribution to academic training.
