Abstract
Food waste results in social, economic and environmental impacts whose distinctions, especially in developing countries, remain misunderstood. The food sector contributes through waste in its different stages of production that, added to poor planning, result in serious impacts on the environment. The Food and Nutrition Units (UANs) are opportune spaces for educational transformation, on how diners approach food. Thus, the present research aimed to implement, in an experimental model, composting processes and biodigestion of food residues produced by ifmg UAN, Bambuí campus. In the initial stage of characterization of waste and waste produced, it was possible to evaluate the quality of the food offered in the period. Subsequently, organic compound, biofertilizer and biogas were obtained with the organic waste treatment processes. These products were submitted to physicochemical analyses for fertility purposes by the Soil Laboratory of the Institution, and biogas was evaluated for their composition by biogas kit, developed by Alfakit and EMBRAPA Pigs and Birds. A program was also developed for managers of UANs (Appendix A), which aims to obtain immediate feedback on the quality of meals served, through data obtained daily with the production and distribution of food.
