Abstract
This work aimed to analyze the evolution of union struggles and working conditions in Brazil, with a focus on the food sector. The research revealed that precariousness and informality are historical characteristics of work in the country, which intensified with the 2017 labor reform and the rise of "platform capitalism". The study showed how the "uberization" of work, with algorithmic management and the transfer of risks to workers, deepened exploitation and the decline in the unionization rate.Despite this scenario, the work highlights the resilience and capacity for self-organization of workers, exemplified by movements such as the "Breque dos Apps" of 2020. This mobilization, articulated through social networks, gave visibility to the struggle for basic rights and imposed the urgency of debating the regulation of work on digital platforms. The analysis concludes that, to face contemporary challenges, it is fundamental for union organizations to renew themselves, adopt new strategies, and seek regulation that guarantees dignity and labor security for all workers, regardless of the type of contract. The work is structured to guide the reader through this journey, beginning with the objectives, followed by the theoretical framework that contextualizes the historical and conceptual foundations. Next, the development will delve into the most relevant strike movements, the achievements gained, and the contemporary challenges. Finally, the concluding remarks will summarize the findings and reflect on the future of the union organization and proposals for strengthening the category.
