Abstract
Contemporary gastronomy has been establishing itself as a multifaceted and interdisciplinary field, capable of both influencing and being influenced by different fields of knowledge, art appears in this scenario closely intertwined with gastronomy. From this context, this study has the general objective of presenting how mosaic art can inspire the creation of an original bespoke dish, incorporating contemporary gastronomy concepts, as to understand it as an artistic-cultural expression. For this matter, the specific goals are to analyse the relation between art and contemporary gastronomy, to identify elements from mosaic art that may be applied as a conceptual and aesthetic reference in gastronomy, to investigate Mineira cuisine, to present the concepts of slow food and comfort food, and how they have been applied to the construction of the dish. The research takes on a qualitative, exploratory approach, grounded in bibliographic research and practical experimentation. The theoretical framework discusses the intersection between art and gastronomy, the Mineira cuisine tradition linked to the “Comfort food” concept and the proposals of the “Slow food” movement, centered around values of seasonality, sustainability, and regional ingredients appreciation. The practical process was inspired by the mosaic O pavão (“The Peacock”), by André Vizotto, articulating fragments of visual and gastronomic elements in order to compose a sensory, aesthetic, and symbolic experience. The theorical-practical development resulted in the dish “Cores e nomes” (“Colors and names”), which navigates between tradition and innovation by revisiting canjiquinha (hulled and broken corn kernels) with pork in new textures and presentations, while also incorporating affective memories and cultural references. It is concluded that, in its dialogue with art, contemporary gastronomy reaffirms its interdisciplinary and expressive character, positioning itself as a medium for identity, memory and belonging, while also fostering reflections about conscious consumption and the democratization of access to both food and art.
